Backups make me nervous. Optical media (CD and DVD) has a limited shelf-life, hard disks are prone to crashing, houses have been known to burn to the ground.
Where do you stop worrying? What do you do about it?
Personally, I back up important shoots to DVD immediately after I get back to the studio - this means that 'PEBKAC' errors (Problem Exists Between Keyboard and Chair), where I do something terminally stupid (like, delete all the photos I just copied onto my hard drive immediately after formatting the memory cards) can be recovered from. In fact, I don't format the memory cards until the DVD is burned...
I also keep archival copies of work I've done on a pair of mirrored disks in a server next to my desk. I'm hoping to have some sort of automated off-site backup from there (over the internet), reasonably soon - you may recall that I found a good option for this just last month...
Of course, there are other ways of backing up too, and the following link shows...
