Creating Stubble and Beards in Photoshop

OK, so we're stretching the bounds a little here - but this is a cute technique. The rather clergical-looking gentleman above's stubble just seems a little too evenly distributed, evenly coloured and hard edged - but that's nothing a bit more photoshop time couldn't fix.
